  • 1 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the peanut butter and brown sugar, mixing until smooth.
  3. Add the egg and vanilla extract, and mix until fully incorporated.
  4. Stir in the baking soda and salt until combined.
  5. Gently fold in the chocolate chips.
  6. Using a tablespoon, scoop out dough and roll it into balls.
  7. Place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Flatten each ball slightly with the back of a fork.
  9. Bake for 10-12 minutes, or until the edges are golden brown.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
