In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
Add the diced onion, green bell pepper, and mushrooms to the skillet. Sauté for about 5 minutes until the vegetables are softened.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add Worcestershire sauce, salt, black pepper, and paprika. Mix well and cook for another 2-3 minutes to combine flavors.
Reduce the heat to low and sprinkle the shredded provolone cheese over the meat mixture. Cover the skillet and let it sit for 2-3 minutes until the cheese is melted.
Toast the hamburger buns lightly, if desired.
Spoon the cheesesteak mixture onto the bottom half of each bun. Top with the other half of the bun and garnish with fresh parsley.
