Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare the pie filling by mixing brown sugar, sugar, flour, cornstarch, and cinnamon.
  2. Peel, core, and slice the apples, then fold into the sugar mixture.
  3. Make the pie crust by cutting cold butter into flour until coarse crumbs form, then add ice water and mix.
  4. Roll out the dough, place in the pie dish, fill with apples, cover with top crust, and bake for 45-55 minutes.
  5. Cool the pie on a wire rack completely.
  6. Preheat your oven to 350°F (175°C) for the cake.
  7. Whisk flour, baking powder, baking soda, and spices in one bowl, and cream butter with sugars in another until fluffy.
  8. Add eggs, vanilla extract, and sour cream, then mix wet and dry ingredients.
  9. Pour half of the cake batter into a buttered springform pan, place the cooled pie on top, and cover with remaining batter.
  10. Bake the piecaken for 35 minutes, then check and cover with foil if browning too quickly, bake for an additional 40-50 minutes.
  11. Cool in the pan for at least 30 minutes, then prepare frosting by mixing softened butter, powdered sugar, milk, and cinnamon.
  12. Frost the cooled piecaken generously and, if using, sprinkle optional crumb topping before serving.
