Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine unsalted butter, brown sugar, and granulated sugar. Cream together on medium speed for 2-3 minutes.
  3. Gently fold in the pumpkin puree, egg, and vanilla extract. Mix on low speed for 1-2 minutes. Add orange food coloring if desired.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, pumpkin pie spice, and salt. Gradually add this mixture to the wet ingredients.
  5. Fold in the chocolate chips, mini marshmallows, and crushed graham crackers carefully.
  6. Drop rounded scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Sprinkle additional chocolate chips, mini marshmallows, and graham cracker pieces on top of each scoop.
  8. Bake in the preheated oven for 12-14 minutes until the edges are golden brown and centers are soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
