  • 2 cups Cooked White Rice Leftover rice is best for texture
For the Flavoring
  • 2 tablespoons Vegetable Oil Canola or sesame oil recommended
  • 2 tablespoons Soy Sauce Low-sodium recommended
For the Vegetables
  • 1 cup Carrots Diced small
  • 1 cup Green Peas Frozen, no thawing needed
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
For the Protein
  • 2 large Eggs Beaten
For Garnish
  • 2 tablespoons Green Onions Chopped

Step-by-Step Instructions
  1. Preheat your air fryer to 370°F (190°C) for about 5 minutes.
  2. Chop your onion and mince the garlic. Heat a small pan with vegetable oil, and sauté the onion until translucent, about 3 minutes. Add minced garlic and stir for an additional minute.
  3. Add diced carrots and frozen peas to the pan. Sauté for about 4 minutes until softened.
  4. In a large bowl, combine the sautéed vegetables with your cooked white rice. Mix everything together evenly.
  5. Pour in the low-sodium soy sauce and drizzle a little more vegetable oil over the rice mix. Stir well for about 2 minutes.
  6. Transfer the rice mixture into the preheated air fryer basket and air fry at 370°F (190°C) for 8-10 minutes, shaking the basket halfway through.
  7. Crack eggs into a bowl and beat them well. Once the rice is done, push it to the side of the air fryer basket, pour the beaten eggs, and stir until fully cooked, about 2-3 minutes.
  8. Fold cooked eggs into the rice. Add in the green onions and mix well. Allow to air fry for an additional 2-3 minutes.
