- Preheat your air fryer to 370°F (190°C) for about 5 minutes.
- Chop your onion and mince the garlic. Heat a small pan with vegetable oil, and sauté the onion until translucent, about 3 minutes. Add minced garlic and stir for an additional minute.
- Add diced carrots and frozen peas to the pan. Sauté for about 4 minutes until softened.
- In a large bowl, combine the sautéed vegetables with your cooked white rice. Mix everything together evenly.
- Pour in the low-sodium soy sauce and drizzle a little more vegetable oil over the rice mix. Stir well for about 2 minutes.
- Transfer the rice mixture into the preheated air fryer basket and air fry at 370°F (190°C) for 8-10 minutes, shaking the basket halfway through.
- Crack eggs into a bowl and beat them well. Once the rice is done, push it to the side of the air fryer basket, pour the beaten eggs, and stir until fully cooked, about 2-3 minutes.
- Fold cooked eggs into the rice. Add in the green onions and mix well. Allow to air fry for an additional 2-3 minutes.
