- Gather all your ingredients. Chop the chicken into uniform bite-sized pieces. Slice the zucchini, red bell pepper, and red onion.
- Heat half of the olive oil in a large skillet over medium-high heat. Add chicken pieces and sear for 7-8 minutes until golden brown.
- In the same skillet, add the remaining olive oil. Sauté red onion and garlic for 1-2 minutes. Add zucchini and red bell pepper, sauté for 3-4 minutes.
- Return the cooked chicken to the skillet. Add halved cherry tomatoes, sun-dried tomatoes, olives, and herbs. Stir and cook for an additional 2-3 minutes.
- Remove from heat, drizzle lemon juice, and crumble feta cheese on top. Let sit for a minute before serving.
