  • 2 Tbsp extra virgin olive oil use liberally
  • 1 cup zucchini sliced
  • 1 cup red bell pepper sliced
  • 1 cup red onion sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes
For the Seasoning
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 2 Tbsp lemon juice added at end of cooking
  • 1/2 cup feta cheese optional
  • 2 Tbsp fresh parsley optional garnish

Method
 

Step-by-Step Instructions
  1. Gather all your ingredients. Chop the chicken into uniform bite-sized pieces. Slice the zucchini, red bell pepper, and red onion.
  2. Heat half of the olive oil in a large skillet over medium-high heat. Add chicken pieces and sear for 7-8 minutes until golden brown.
  3. In the same skillet, add the remaining olive oil. Sauté red onion and garlic for 1-2 minutes. Add zucchini and red bell pepper, sauté for 3-4 minutes.
  4. Return the cooked chicken to the skillet. Add halved cherry tomatoes, sun-dried tomatoes, olives, and herbs. Stir and cook for an additional 2-3 minutes.
  5. Remove from heat, drizzle lemon juice, and crumble feta cheese on top. Let sit for a minute before serving.
