- Preheat your oven to 325°F (160°C).
- In a medium mixing bowl, combine the large eggs, ricotta cheese, salt, and freshly ground pepper. Blend until smooth.
- Take your silicone molds and place them in a baking pan.
- Carefully pour the egg mixture into the prepared silicone molds, filling each one about three-quarters full.
- Create a water bath by pouring hot water into the baking pan until it reaches halfway up the sides of the silicone molds.
- Place the baking pan with the filled molds into the preheated oven. Bake for 25 to 35 minutes.
- Once baked, let the Quick Ricotta Egg Bites cool for a few minutes before removing from molds.
