  • 2 cups strawberries hulled and sliced
  • 2 cups blueberries
  • 1 cup raspberries
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping like Cool Whip
  • 1/2 cup crushed graham crackers
  • Mint leaves for garnish optional

Method
 

  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  3. Gently fold in the whipped topping until the mixture is light and fluffy.
  4. In a large serving bowl, layer half of the strawberries, blueberries, and raspberries.
  5. Spread half of the cheesecake mixture over the berries.
  6. Repeat the layers with the remaining berries and cheesecake mixture.
  7. Top with crushed graham crackers for added crunch.
  8. Chill in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
