Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 8 oz package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 banana sliced
  • 1/4 cup shredded coconut optional

Method
 

  1. Preheat your oven to 350°F. Grease a 12-inch pizza pan or line it with parchment paper.
  2. In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Add the softened butter, egg, and vanilla extract. Mix until a dough forms.
  3. Press the dough evenly into the prepared pizza pan. Bake for 12-15 minutes or until lightly golden. Remove from the oven and let it cool completely.
  4. In another bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Once the crust is cool, spread the cream cheese mixture evenly over the top.
  6. Arrange the sliced strawberries, blueberries, and banana on top of the cream cheese layer in a decorative pattern. If desired, sprinkle shredded coconut over the fruit.
  7. Chill the fruit pizza in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
