Step-by-Step Instructions for Carne Asada Tacos
  1. Preheat your grill to medium-high heat, around 450°F (232°C). Season the flank steak with spices of your choice and place it on the grill. Cook for about 5-7 minutes per side, aiming for medium-rare doneness. Remove from heat and let it rest for 5 minutes.
  2. Once the carne asada has rested, slice the steak against the grain into thin strips, then chop into bite-sized pieces.
  3. While the steak is resting, heat a skillet or griddle. Place the tortillas in for about 30 seconds on each side until warm and pliable.
  4. Mash your avocados in a bowl with salt and lime juice. Finely dice the onion and chop the fresh cilantro.
  5. Take a warm tortilla, spread a layer of mashed avocado, add chopped carne asada, and sprinkle with cotija cheese, onion, and cilantro.
  6. Squeeze fresh lime juice over the tacos before serving and enjoy!
