Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare your baking dish by greasing it.
  2. In a large mixing bowl, combine the shredded chicken, sliced zucchini, halved cherry tomatoes, mozzarella cheese, and half of the Parmesan cheese. Stir gently until combined.
  3. Drizzle olive oil into the greased baking dish and spread it evenly.
  4. Transfer the mixture into the prepared baking dish and spread evenly.
  5. Sprinkle the remaining Parmesan cheese over the top.
  6. Bake in the preheated oven for 25 to 30 minutes, until the zucchini is tender and the cheese is bubbly.
  7. Allow to cool slightly before serving. Optionally garnish with fresh basil.
