- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a medium skillet, heat oil and sauté diced onions for about 5 minutes until soft.
- In a large mixing bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese. Mix gently.
- Transfer the mixture into the prepared baking dish and shape into a loaf.
- Sprinkle the remaining Parmesan cheese and optional toppings over the meatloaf.
