Ingredients
  

For the Base
  • 2 tablespoons Olive oil good quality
  • 4 cloves Garlic minced
  • 1 medium Onion finely chopped
  • 28 ounces Crushed tomatoes preferably San Marzano
  • 2 tablespoons Tomato paste
For the Flavor
  • 1/4 cup Fresh basil chopped
  • 1 teaspoon Oregano dried or fresh
  • to taste Salt
  • to taste Black pepper freshly cracked
  • 1 teaspoon Sugar
For the Finish
  • 1/4 cup Parmesan cheese grated
  • to taste pinch Red pepper flakes optional

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add 4 minced garlic cloves and 1 finely chopped onion. Sauté for 5-7 minutes until the onion is translucent.
  3. Add 28 ounces of crushed tomatoes and 2 tablespoons of tomato paste, stir and simmer for 10-15 minutes.
  4. Stir in 1 teaspoon of dried oregano, 1 teaspoon of sugar, and salt and pepper to taste, simmer for another 5 minutes.
  5. Just before serving, stir in 1/4 cup of chopped fresh basil and let wilt for a minute before serving.
  6. Drizzle olive oil on top, sprinkle with grated Parmesan cheese and red pepper flakes before serving.
