  • 4 pieces Chicken Thighs Bone-in, skin-on
  • 1/2 cup Soy Sauce Tamari for gluten-free option
  • 2 tablespoons Honey Maple syrup for vegan option
  • 1/2 cup Peanut Butter Natural creamy preferred
  • 2 tablespoons Rice Vinegar Apple cider vinegar as alternative
  • 1 tablespoon Fresh Ginger Grated, or ground if fresh isn't available
  • 4 cloves Garlic Minced, adjust quantity if using pre-minced
  • 1 teaspoon Ground Cumin Can be skipped
  • 1 teaspoon Ground Coriander Optional but recommended
  • 1/2 teaspoon Red Pepper Flakes Adjust based on spice preference
  • 2 tablespoons Sesame Oil Canola oil as a lighter substitute
  • 2 tablespoons Lime Juice Lemon juice can be used
For Garnish
  • 1/4 cup Cilantro Optional
  • 2 tablespoons Sesame Seeds Toast for extra flavor

Method
 

Preparation
  1. In a mixing bowl, whisk together soy sauce, honey, peanut butter, rice vinegar, grated fresh ginger, minced garlic, ground cumin, ground coriander, red pepper flakes, sesame oil, and lime juice until a smooth, creamy marinade forms.
  2. Place the chicken thighs into a bowl or zip-top bag, pour the marinade over, and refrigerate for at least 2 hours, ideally overnight.
  3. Preheat your grill to medium-high heat or oven to 400°F (200°C).
  4. Grill each piece skin-side down for 6-8 minutes, then flip and cook for another 6-8 minutes, or until the internal temperature reaches 165°F.
  5. Or, roast the chicken on a baking sheet for 35-40 minutes, basting occasionally with marinade.
  6. Let it rest for a few minutes before garnishing with cilantro and sesame seeds.
