Method
 

Preparation Steps
  1. Season the chicken breasts with Italian seasoning, salt, and black pepper, ensuring they are evenly coated.
  2. In a skillet, heat olive oil over medium-high heat. Sear the chicken for 5-6 minutes until golden-brown.
  3. Transfer the chicken to the crockpot. In the same skillet, add crushed tomatoes, chicken broth, red wine, oregano, basil, salt, and pepper. Stir and pour over chicken.
  4. Cover the crockpot and cook on high for 3 hours.
  5. Once cooked, shred the chicken in the crockpot using two forks or a hand mixer.
  6. Stir in spinach, Greek yogurt, and Parmesan. Cook for an additional 10 minutes.
  7. Cook penne pasta according to package directions, drain, and stir into the crockpot.
  8. Serve with extra Parmesan and fresh basil on top.
