  • 2 tablespoons Olive Oil or substitute with avocado oil, butter, or ghee
  • 1 pound Ground Beef 85/15 ground beef or substitute
  • 1 medium Minced Onion shallots can be used
  • 3 cloves Minced Garlic fresh garlic is best
For the Soup
  • 28 ounces Crushed Tomatoes or use tomato puree or sauce
  • 1 Bay Leaf optional
  • 1 teaspoon Dried Basil or use fresh herbs
  • 1 teaspoon Dried Parsley or use fresh herbs
  • 1 teaspoon Dried Oregano or use fresh herbs
  • Black Pepper to taste
  • Red Pepper Flakes optional, to taste
For the Broth
  • 4 cups Low Sodium Beef Broth or substitute with chicken or vegetable broth
  • 1 cup Water to balance the broth
For the Pasta
  • 8 ounces Reginetti Pasta or broken lasagna noodles or mafaldine
For Garnish
  • 1 cup Ricotta Cheese optional
  • 1/2 cup Grated Parmesan Cheese adjust according to preferences

Method
 

Step-by-Step Instructions
  1. Heat olive oil in a large pot over medium-high heat for about 3 minutes.
  2. Add ground beef and cook for about 10 minutes until browned.
  3. Stir in onion and garlic; sauté for 2-3 minutes until onion is soft.
  4. Pour in crushed tomatoes, broth, water, bay leaf, herbs, salt, and pepper.
  5. Bring the mixture to a boil.
  6. Add pasta and cook uncovered for about 4-5 minutes.
  7. Remove from heat and let sit for 5 minutes. Discard bay leaf.
  8. Ladle into bowls and top with ricotta and Parmesan cheese.
