- In a saucepan, add the turkey pieces with crushed Maggi cubes, salt, and enough water to cover. Boil gently, then simmer for about 30 minutes.
- Clean the shrimp and smoked fish. Puree the onion and bell pepper in a blender until smooth.
- In a large pot, heat palm oil until it shimmers. Add the blended veggie mixture and sauté for 5-7 minutes.
- Add shredded turkey and reserved cooking water to the pot with smoked fish and dried crayfish. Simmer for about 5 minutes.
- Stir in pureed okra and sliced okra, cooking for 10 minutes, stirring occasionally.
- Add shrimp and cook until they turn opaque, about 3 minutes.
- Taste and adjust seasoning. Stir in spinach just before serving.
