  • 1 pound Okra fresh preferred, thawed if frozen
  • 1 cup Palm Oil for authentic flavor
  • 1 large Onion sauté until fragrant
  • 1 large Bell Pepper blend with onion for smooth puree
  • 1 pound Turkey or other preferred protein
  • 1 cup Smoked Fish add later in cooking
  • 1 pound Shrimp cook until opaque
  • 2 tablespoons Dried Crayfish grind finely before adding
  • 2 cubes Maggi Cubes or seasoning cubes
  • 2 cups Spinach add at the end of cooking
For Serving
  • 4 servings Pounded Yam or rice, garri, amala

Method
 

Step-by-Step Instructions
  1. In a saucepan, add the turkey pieces with crushed Maggi cubes, salt, and enough water to cover. Boil gently, then simmer for about 30 minutes.
  2. Clean the shrimp and smoked fish. Puree the onion and bell pepper in a blender until smooth.
  3. In a large pot, heat palm oil until it shimmers. Add the blended veggie mixture and sauté for 5-7 minutes.
  4. Add shredded turkey and reserved cooking water to the pot with smoked fish and dried crayfish. Simmer for about 5 minutes.
  5. Stir in pureed okra and sliced okra, cooking for 10 minutes, stirring occasionally.
  6. Add shrimp and cook until they turn opaque, about 3 minutes.
  7. Taste and adjust seasoning. Stir in spinach just before serving.
