Ingredients

For the Pizza Crust
  • 1 piece Pizza Crust Opt for a thin, European-style crust for the best crispy texture.
For the Sauce
  • 1 cup Red Pesto with Sundried Tomatoes Can substitute with traditional tomato sauce if preferred.
For the Toppings
  • 2 cups Pumpkin Peeled and chopped; pie pumpkins enhance sweetness.
  • 0.25 cups Red Onion Sliced thin; can be swapped with shallots.
  • 1 large Roasted Red Pepper Chopped; contributes sweetness and texture.
  • 8 ounces Provolone Cheese Delivers creamy goodness; shredded cheese is a convenient substitute.
  • 5 strips Bacon Cooked and chopped; can be replaced with sautéed mushrooms.
For Drizzling
  • 1 tablespoon Olive Oil Extra virgin enhances the roasting flavor.

Equipment

  • Oven
  • baking dish
  • Pizza stone

Method

Preparation Steps
  1. Preheat your oven to 400°F (200°C) to create a perfectly crisp pizza crust.
  2. Combine the peeled and chopped pumpkin, sliced red onion, and olive oil in a baking dish. Toss until well-coated. Roast for about 20 minutes until tender and caramelized.
  3. After roasting, increase the oven temperature to 450°F (232°C).
  4. Spread red pesto with sundried tomatoes evenly across the pizza crust, leaving a small border around the edge.
  5. Layer half of the provolone cheese evenly over the sauce.
  6. Distribute half of the roasted pumpkin and onion mixture over the cheese layer.
  7. Finish by adding the remaining provolone cheese and the rest of the roasted pumpkin and onion mixture. Top with chopped bacon or sautéed mushrooms for a vegetarian option.
  8. Bake for 15 minutes or until the crust is golden brown and the cheese is bubbly.
  9. Allow to cool for a few minutes before slicing and serving.

Notes

For the best flavor, choose pie pumpkins over carving pumpkins. Allow the roasted mixture to cool slightly before layering to prevent a soggy crust.
