- Rinse the white rice under cold water until it runs clear. Combine in a pot with water or chicken broth and a pinch of salt. Bring to a boil, reduce to low, cover and cook for 15-20 minutes until fluffy.
- In a large skillet, heat olive oil over medium heat. Add ground beef or turkey, breaking it up while cooking. Season with taco seasoning, cooking for 6-8 minutes until browned. Remove from heat.
- In the same skillet, add the rinsed black beans. Season with cumin and garlic. Simmer for 5-7 minutes until warmed.
