Ingredients
  

For the Noodles
  • 12 oz Udon Noodles Opt for vacuum-packed for best texture.
For the Stir-Fry
  • 1 tbsp Neutral Oil Can substitute with canola or vegetable oil.
  • 1 lb Shrimp Fresh or frozen; chicken or tofu can be used.
  • 2 cloves Garlic Minced.
  • 1 medium Yellow Onion Can use shallots as a substitute.
  • 8 oz White Mushrooms Baby bella mushrooms are a good alternative.
  • 1 medium Carrot Cut into matchsticks.
  • 2 scallions Spring Onion Reserve green parts for garnish.
For the Sauce
  • 3 tbsp Soy Sauce Tamari for gluten-free.
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Oyster Sauce Vegetarian versions available.
  • 1 tbsp Dark Soy Sauce Distinct from regular soy sauce.
  • 1 tbsp Rice Vinegar Apple cider vinegar can be used.
  • 1 tbsp Brown Sugar Honey can be an alternative.
  • 1 tsp Freshly Crushed Black Pepper
  • 1 tbsp Toasted Sesame Oil

Method
 

Preparation
  1. Boil the udon noodles in a large pot of water for 4-5 minutes, then drain and rinse with cold water.
  2. In a skillet, heat 1 tablespoon of neutral oil and sauté minced garlic for 1 minute. Add sliced mushrooms and cook for 2-3 minutes.
  3. Add sliced onion and matchstick-cut carrots to the skillet. Stir-fry for 2-3 minutes, then season with salt and pepper.
  4. Increase heat to high, add 2 tablespoons of oil, and fry the shrimp seasoned with soy sauce for 2-3 minutes.
  5. Add the cooked udon noodles to the skillet and stir-fry for 2-3 minutes.
  6. Pour the sauce mixture into the skillet and toss for an additional 2 minutes.
  7. Return the cooked vegetables to the skillet and mix gently. Serve hot, garnished with spring onion greens.
