Preparation
- Boil the udon noodles in a large pot of water for 4-5 minutes, then drain and rinse with cold water.
- In a skillet, heat 1 tablespoon of neutral oil and sauté minced garlic for 1 minute. Add sliced mushrooms and cook for 2-3 minutes.
- Add sliced onion and matchstick-cut carrots to the skillet. Stir-fry for 2-3 minutes, then season with salt and pepper.
- Increase heat to high, add 2 tablespoons of oil, and fry the shrimp seasoned with soy sauce for 2-3 minutes.
- Add the cooked udon noodles to the skillet and stir-fry for 2-3 minutes.
- Pour the sauce mixture into the skillet and toss for an additional 2 minutes.
- Return the cooked vegetables to the skillet and mix gently. Serve hot, garnished with spring onion greens.
