  1. Begin by grating two medium zucchinis into a mixing bowl. Squeeze the moisture out using a cheesecloth.
  2. In the mixing bowl, combine the grated zucchini with one large egg, half a cup of Parmesan, two tablespoons of cornstarch, and salt and pepper. Mix until you achieve a dough-like consistency.
  3. In a skillet, melt three tablespoons of garlic butter over medium heat until bubbly.
  4. Scoop the mixture into the skillet, forming two patties. Flatten each patty slightly.
  5. Cook each patty for about 3–4 minutes per side until golden brown and crispy.
  6. Sprinkle shredded cheddar cheese on one patty, place the other patty on top, and cook for an additional 3 minutes.
  7. Once the cheese has melted, let the sandwich cool for about 60 seconds before slicing.
