Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your 9x13-inch baking dish with parchment paper or grease it.
  2. In a skillet, heat olive oil over medium heat and sauté the chopped red onion and diced red bell pepper for about 5 minutes until soft.
  3. Add minced garlic to the skillet, cooking for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, beaten egg, tomato paste, sautéed vegetables, and season with salt, pepper, and parsley. Mix thoroughly.
  5. On parchment paper, flatten the meat mixture into a rectangle measuring about 8" x 15".
  6. Layer the meat mixture with deli ham, fresh basil leaves, and mozzarella cheese, leaving a 1-inch border.
  7. Carefully roll the meat mixture tightly using the parchment paper, pinching the edges to seal.
  8. Place the meatloaf seam side down in the baking dish and bake for about 1 hour until the internal temperature reaches 160°F (71°C).
  9. Let the meatloaf rest for 10 minutes tented with foil, then slice and serve with marinara sauce and noodles.
