  • 1 tbsp Smoky Black Tea Opt for Lapsang Souchong or Harney & Sons Black Cask Bourbon.
  • 1 cup Milk Whole milk, almond, or oat milk.
For the Spices
  • 5 pcs Black Peppercorns Freshly crushed for better flavor release.
  • 3 pcs Whole Cloves Always use whole cloves for optimal infusion.
  • 3 pcs Green Cardamom Pods Crush slightly to release essential oils.
  • 1 pcs Cinnamon Stick Whole sticks for a cleaner infusion.
  • 1 pcs Star Anise Optional for a hint of licorice flavor.
For Sweetening
  • 2 tbsp Brown Sugar Adjust to taste.

Method
 

Step-by-Step Instructions
  1. In a small pot, combine 2 cups of water and bring it to a vigorous boil over medium-high heat.
  2. Once boiling, add in freshly crushed black peppercorns, whole cloves, slightly crushed green cardamom pods, a cinnamon stick, and star anise if desired. Lower the heat to a simmer and let this combination cook for about 5 minutes.
  3. Stir in your chosen smoky black tea and allow it to steep for 3-4 minutes.
  4. Gently stir in your preferred milk along with brown sugar to taste. Let this mixture simmer on low heat for another 3-4 minutes.
  5. Remove the pot from heat, and carefully strain the chai into your favorite mugs.
