- In a small pot, combine 2 cups of water and bring it to a vigorous boil over medium-high heat.
- Once boiling, add in freshly crushed black peppercorns, whole cloves, slightly crushed green cardamom pods, a cinnamon stick, and star anise if desired. Lower the heat to a simmer and let this combination cook for about 5 minutes.
- Stir in your chosen smoky black tea and allow it to steep for 3-4 minutes.
- Gently stir in your preferred milk along with brown sugar to taste. Let this mixture simmer on low heat for another 3-4 minutes.
- Remove the pot from heat, and carefully strain the chai into your favorite mugs.
