Preparing the Cookies
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Gradually add the flour while mixing on low speed until fully incorporated.
- Cover the dough with plastic wrap and refrigerate for 1 hour.
- Roll out the chilled dough to about 1/4-inch thickness on a floured surface.
- Brush the surface lightly with a beaten egg and sprinkle with chopped almonds and colored sugar.
- Cut the rolled dough into 2x1-inch strips and place on ungreased baking sheets.
- Bake at 350°F (175°C) for 10-12 minutes until lightly browned.
- Cool on wire racks completely before serving.
