  • 1 large egg can substitute with a flax egg or applesauce for vegan option
Topping
  • 1/2 cup almonds finely chopped, can substitute with hazelnuts
  • to taste colored sugar optional

Method
 

Preparing the Cookies
  1. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  2. Gradually add the flour while mixing on low speed until fully incorporated.
  3. Cover the dough with plastic wrap and refrigerate for 1 hour.
  4. Roll out the chilled dough to about 1/4-inch thickness on a floured surface.
  5. Brush the surface lightly with a beaten egg and sprinkle with chopped almonds and colored sugar.
  6. Cut the rolled dough into 2x1-inch strips and place on ungreased baking sheets.
  7. Bake at 350°F (175°C) for 10-12 minutes until lightly browned.
  8. Cool on wire racks completely before serving.
