Step-by-Step Instructions
  1. In a medium bowl, whisk together mayo or Greek yogurt, fresh lime juice, chili powder, garlic powder, cumin, paprika, and salt until smooth and slightly thickened, about 2 minutes.
  2. In a large mixing bowl, add shredded chicken, rinsed black beans, sweet corn, diced jalapeños, quartered cherry tomatoes, chopped red onion, and pepitas. Gently toss for about 1-2 minutes.
  3. Pour the prepared dressing over the salad mixture and stir until all components are evenly coated.
