Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional for extra heat
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup chopped fresh cilantro
  • 1 ripe avocado
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • Salt to taste

Method
 

  1. In a skillet over medium heat, add olive oil. Once hot, add the shredded chicken, chili powder, cumin, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Stir to combine and cook for about 5 minutes until heated through and fragrant.
  2. While the chicken is cooking, prepare the Avocado Lime Crema. In a blender or food processor, combine the avocado, sour cream, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning as needed.
  3. Warm the tortillas in a dry skillet or microwave until pliable.
  4. To assemble the tacos, place a generous portion of the spicy chicken on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, and a drizzle of Avocado Lime Crema. Sprinkle with chopped cilantro.
  5. Serve immediately and enjoy!
