- Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans.
- In a large mixing bowl, whisk together the granulated sugar, flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, mix the eggs (or chia eggs), milk, oil, and vanilla extract until smooth. Combine with dry ingredients.
- Carefully stir in the boiling water until you have a thin batter.
- Divide the batter between the cake pans and bake for about 25 minutes until a toothpick comes out clean.
- Let the cakes cool for 5 minutes in the pans, then transfer to a wire rack to cool completely.
- Make the frosting by beating the cream cheese and butter until smooth. Gradually add powdered sugar.
- Once cooled, frost the top of one cake layer, place the second layer on top, and frost the entire cake.
