  • 1 cup Granulated Sugar or Coconut Sugar/Honey
  • 1 cup Flour all-purpose or gluten-free
  • 1/2 cup Cocoa Powder Dutch-process
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 large Eggs or Chia Eggs for vegan
  • 1 cup Milk any type, including plant-based
  • 1/2 cup Oil neutral oil like canola
  • 2 tsp Vanilla Extract
  • 1 cup Boiling Water
For the Frosting
  • 8 oz Cream Cheese room temperature
  • 1/2 cup Unsalted Butter room temperature
  • 1 cup Powdered Sugar sifted
For the Decorations
  • 1 can Canned Lychees for eyeballs
  • 1 cup Blueberries for pupils
  • 1/4 cup Strawberry Jam for decoration

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans.
  2. In a large mixing bowl, whisk together the granulated sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the eggs (or chia eggs), milk, oil, and vanilla extract until smooth. Combine with dry ingredients.
  4. Carefully stir in the boiling water until you have a thin batter.
  5. Divide the batter between the cake pans and bake for about 25 minutes until a toothpick comes out clean.
  6. Let the cakes cool for 5 minutes in the pans, then transfer to a wire rack to cool completely.
  7. Make the frosting by beating the cream cheese and butter until smooth. Gradually add powdered sugar.
  8. Once cooled, frost the top of one cake layer, place the second layer on top, and frost the entire cake.
  9. Decorate with lychees filled with blueberries and drizzle strawberry jam around for effect.
  10. Chill until ready to serve or store in the fridge, covered, for up to 4 days.
