- In a medium-sized mixing bowl, combine plain Greek yogurt, rolled oats, and unsweetened milk. Add chia seeds, vanilla extract, and a pinch of salt. Sweeten with honey or maple syrup. Whisk until smooth.
- Gently fold in chopped fresh strawberries and softened cream cheese. Squeeze in lemon juice and add lemon zest. Mix until evenly distributed.
- Transfer the mixture into airtight containers, filling them about ¾ full.
- Refrigerate the jars for at least 4 hours, preferably overnight.
- In the morning, serve cold or warm in the microwave for 30-60 seconds, and top with extra strawberries or yogurt if desired.
