- Preheat your oven to 375°F (190°C).
- In a medium-sized bowl, combine pure maple syrup, Dijon mustard, whole grain mustard, minced garlic, fresh rosemary, thyme, salt, and pepper. Whisk until well mixed.
- Pat the bone-in pork chops dry and season both sides with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Add the pork chops, searing for 3-4 minutes on each side until browned.
- Pour the glaze over the seared pork chops, then add chicken broth around the chops in the skillet.
- Transfer the skillet to your preheated oven and bake for 20-25 minutes until internal temperature reaches 145°F (63°C).
- Remove from the oven and let the pork chops rest for 5 minutes before serving. Garnish with fresh parsley and rosemary.
