Step-by-Step Instructions
  1. Begin by generously seasoning the beef short ribs with salt and pepper.
  2. In a large skillet, heat unsalted butter and brown the ribs.
  3. Add baby carrots and sliced mushrooms to the crockpot.
  4. Combine beef broth, tomato paste, minced garlic, bay leaf, and thyme in a bowl, and add optional red wine.
  5. Pour the sauce over the beef and vegetables in the crockpot, and cook on low for about 8 hours.
  6. After 8 hours, check the tenderness of the beef; it should be fork-tender.
  7. Remove the ribs and vegetables, and discard the bay leaf and thyme sprigs. Plate for serving.
  8. Reserve some cooking liquid for drizzling before serving.
