Coconut Rice Ingredients
  • 1 cup Jasmine rice Can use basmati as alternative
  • 1 cup Coconut milk Almond or soy milk alters flavor
  • 1 cup Chicken broth Vegetable broth can substitute
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
Garnishing
  • 1/4 cup Fresh cilantro Can use parsley
  • 2 pieces Lime wedges

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together pure maple syrup, soy sauce, sriracha, minced garlic, and chili flakes.
  3. Season chicken breasts with salt and pepper, then sear in a skillet with olive oil for 2-3 minutes per side until golden brown.
  4. Transfer seared chicken to a baking dish and pour the marinade over it. Bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
  5. In a saucepan, combine jasmine rice, coconut milk, chicken broth, and salt. Bring to a boil, then reduce heat and simmer for 18-20 minutes.
  6. After baking, let the chicken rest for about 5 minutes, then spoon the pan sauce over it.
  7. Fluff the coconut rice with a fork and serve alongside the marinated chicken. Garnish with fresh cilantro and lime wedges.

Notes
