- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together pure maple syrup, soy sauce, sriracha, minced garlic, and chili flakes.
- Season chicken breasts with salt and pepper, then sear in a skillet with olive oil for 2-3 minutes per side until golden brown.
- Transfer seared chicken to a baking dish and pour the marinade over it. Bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
- In a saucepan, combine jasmine rice, coconut milk, chicken broth, and salt. Bring to a boil, then reduce heat and simmer for 18-20 minutes.
- After baking, let the chicken rest for about 5 minutes, then spoon the pan sauce over it.
- Fluff the coconut rice with a fork and serve alongside the marinated chicken. Garnish with fresh cilantro and lime wedges.
