  • 2 cups fresh corn kernels about 4 ears of corn
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine the corn, cherry tomatoes, cucumber, red onion, cilantro, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper until well combined.
  3. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  4. Let the salad sit for at least 15 minutes to allow the flavors to meld. For best results, refrigerate for 30 minutes before serving.
  5. Serve chilled or at room temperature.
