  • 1 cup Milk Any type of milk (dairy or non-dairy) works.
  • 1 tablespoon Fresh Thyme Dried thyme is a suitable substitute.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish.
  2. In a large skillet, heat avocado oil over medium heat. Sauté sweet potatoes, onion, green pepper, and garlic for 8-9 minutes until tender.
  3. Layer the sautéed vegetables in the greased casserole dish evenly.
  4. Cook the turkey sausage in the same skillet over medium heat for 5-7 minutes until browned. Drain excess grease and add to vegetable mix.
  5. In a bowl, whisk together eggs, milk, thyme, salt, pepper, and shredded cheese until smooth.
  6. Pour the egg mixture over the vegetable and sausage layers in the casserole dish.
  7. Bake for 40-45 minutes until a knife inserted comes out clean. Cover with foil if the top browns too quickly.
  8. Let cool for 10-15 minutes before slicing and serving.
