Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the ground turkey and cook until browned and cooked through, about 5-7 minutes.
Add the minced garlic and ginger to the skillet, stirring for about 1 minute until fragrant.
Add the broccoli, bell pepper, snap peas, and carrot to the skillet. Stir-fry the vegetables for about 3-5 minutes until they are tender-crisp.
Pour the teriyaki sauce and sesame oil over the turkey and vegetables, stirring well to combine. Cook for an additional 2-3 minutes until everything is heated through.
Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
Serve the stir-fry over cooked rice or quinoa.
