Tex-Mex Tater Tot Casserole: A Flavorful Family Favorite!

A flavorful and hearty Tex-Mex Tater Tot Casserole that combines ground beef, beans, corn, and cheese, topped with crispy tater tots.

Ingredients
  

  • 2 pounds ground beef
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 1 can 10 ounces diced tomatoes with green chilies
  • 1 packet 1 ounce taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 bag 32 ounces frozen tater tots
  • Salt and pepper to taste
  • Fresh cilantro chopped (for garnish)

Method
 

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the diced onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.
  3. Stir in the black beans, corn, diced tomatoes, and taco seasoning. Mix well and let simmer for 5 minutes. Season with salt and pepper to taste.
  4. In a large bowl, combine the beef mixture with the sour cream and half of the shredded cheddar cheese. Mix until well combined.
  5. Spray the inside of a slow cooker with cooking spray. Layer half of the tater tots on the bottom of the slow cooker.
  6. Pour the beef mixture over the tater tots, spreading it evenly. Top with the remaining tater tots and sprinkle the rest of the cheddar cheese on top.
  7. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the tater tots are heated through and the cheese is melted.
  8. Once cooked, garnish with chopped cilantro before serving.

Notes

  • For a spicier version, add diced jalapeños to the beef mixture or use spicy taco seasoning.
