  • 1 French baguette sliced into 1/2-inch pieces
  • 4 medium ripe tomatoes diced
  • 1/4 cup fresh basil leaves chopped
  • 2 cloves garlic minced
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the sliced baguette on a baking sheet and brush each piece lightly with olive oil.
  3. Toast the baguette slices in the oven for about 5-7 minutes or until they are golden brown and crispy.
  4. In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, and the remaining olive oil. Season with salt and pepper to taste.
  5. Remove the toasted baguette from the oven and let it cool slightly.
  6. Spoon the tomato mixture generously onto each toasted baguette slice. If desired, sprinkle shredded mozzarella cheese on top.
  7. Return the bruschetta to the oven for an additional 2-3 minutes to melt the cheese, if using.
  8. Serve immediately while warm.
