  • 4 slices pepperoni
  • 4 slices turkey or ham/omit for vegetarian
  • 2 slices provolone cheese or mozzarella
  • 1 medium tomato sliced, optional
  • ¼ cup grated Parmesan cheese or nutritional yeast

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine mayonnaise, red wine vinegar, garlic powder, and oregano. Whisk until smooth. Season with salt and pepper. Fold in lettuce, red onion, and banana peppers until well-coated.
  2. Take sub rolls and lay them open. Layer with salami, pepperoni, and then turkey. Add provolone cheese.
  3. Preheat oven's broiler to high. Place sandwiches on a baking sheet lined with parchment paper. Broil for 2-3 minutes until cheese is melted.
  4. Remove from oven and top with tomato slices, sprinkling with salt and pepper.
  5. Spoon grinder salad onto each sandwich, sprinkling with grated Parmesan.
  6. Close each sandwich and cut in half if desired. Serve warm.
