Ingredients
  

For the Sweet Potatoes
  • 4 medium Sweet Potatoes can substitute with regular potatoes or butternut squash
For the Filling
  • 1 can Chickpeas drained
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 medium Red Onion finely chopped
  • 1/2 cup Kalamata Olives sliced
  • 1 cup Feta Cheese crumbled
  • 1/4 cup Fresh Parsley chopped
  • 1/4 cup Fresh Mint optional
For the Dressing
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Lemon Juice
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • to taste Salt and Black Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Scrub the sweet potatoes and prick them several times with a fork.
Cooking
  1. Roast the sweet potatoes in the oven for 40-50 minutes until fork-tender.
  2. Prepare the filling by combining the chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and mint in a mixing bowl.
  3. Whisk together the dressing ingredients and season with salt and black pepper.
  4. Dress the filling mixture with the prepared dressing and toss to coat.
Serving
  1. Cool the sweet potatoes for 5-10 minutes, then slice each one lengthwise, fluffing the insides.
  2. Stuff the sweet potatoes with the filling and serve immediately.
