- In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, cooled and diced bacon, mayonnaise, sour cream, and optional hot sauce. Mix gently until fully incorporated and smooth.
- Preheat your oven to 190°C (375°F). Carefully slice each bagel in half horizontally but don’t cut all the way through. Gently push the center down to create enough space for the filling.
- Evenly distribute the creamy filling among the bagel halves, smoothing it out. Ensure each bagel is generously filled.
- Place the filled bagels on a baking tray lined with parchment paper and bake for about 12-15 minutes, until golden brown and bubbling.
- Remove the bagels from the oven and let them cool slightly. Garnish with reserved crispy bacon bits and freshly chopped chives. Serve warm.
