  1. Preheat your oven to 375°F (190°C).
  2. Trim any excess fat from the dark meat chicken pieces and pat them dry. Season with kosher salt, smoked paprika, and Montreal chicken seasoning.
  3. Melt half a stick of butter in a large skillet over medium heat, then add diced red onion and sauté until soft.
  4. Add minced garlic and cook for another 1-2 minutes until fragrant. Stir in red pepper flakes.
  5. Pour in chicken stock, lemon juice, and heavy whipping cream; stir and let simmer for about 5 minutes.
  6. Transfer seasoned chicken to a baking dish and pour sauce over, ensuring all pieces are coated. Sprinkle Parmesan cheese on top.
  7. Place in the oven and bake for 1 hour and 45 minutes, checking for doneness.
