- Begin by heating a large skillet over medium heat. Add your chopped bacon and cook for about 3-4 minutes until it becomes crispy and golden brown. Remove the bacon from the skillet and drain it on a paper towel, leaving the bacon grease in the pan.
- In the same skillet with the leftover bacon grease, add the trimmed and halved Brussels sprouts. Toss them gently to coat with the grease and push them cut side down. Cover the skillet and cook for 5 minutes.
- After 5 minutes, uncover the skillet and stir the Brussels sprouts. Cover again and cook for an additional 5-8 minutes, stirring occasionally, until they are caramelized and tender.
- Once the Brussels sprouts are cooked, remove from heat. Add crispy bacon, lemon zest, lemon juice, salt, and pepper. Gently mix until combined.
