  • 1 pound flank steak skirt steak can be substituted
  • 1 tablespoon cornstarch for marinating
  • 1/2 teaspoon baking soda optional for tenderizing
For the Sauce
  • 1/4 cup soy sauce tamari for gluten-free
  • 1 tablespoon dark soy sauce regular soy sauce can be used
  • 2 tablespoons peanut oil or vegetable oil as a substitute
  • 2 tablespoons Shaoxing wine or dry sherry, omit for alcohol-free
  • 1 tablespoon brown sugar white sugar can be used
  • 1/2 cup chicken or beef stock water can be substituted in a pinch
For the Vegetables
  • 2 cups broccoli can add carrots or snap peas
  • 3 cloves garlic minced
  • 1 tablespoon ginger minced

Method
 

Preparation Steps
  1. Slice the flank steak against the grain into thin strips.
  2. Marinate the beef with soy sauce, peanut oil, and cornstarch for about 10 minutes.
  3. In a separate bowl, mix dark soy sauce, stock, Shaoxing wine, and brown sugar to create the sauce.
  4. Add water to a deep skillet and bring to a simmer, then steam the broccoli for about 1 minute.
  5. Heat the skillet with peanut oil, then cook the marinated beef until charred yet slightly pink.
  6. Add minced garlic and ginger to the beef, stirring for about 30 seconds.
  7. Return the steamed broccoli to the skillet and pour the sauce over the mixture. Cook until sauce thickens.
  8. Serve immediately over rice or noodles.
