Step‑by‑Step Instructions for Authentic Carne Guisada
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add ½ cup chopped scallions and 4 minced garlic cloves, sauté for 2-3 minutes until fragrant.
  2. Stir in 1 can of diced tomatoes, ¼ cup chopped cilantro, and a pinch of salt. Cook for an additional 2 minutes.
  3. Add 2 pounds of beef stew meat and brown slightly for about 5 minutes. Pour in 1 cup of light beer, 1 cup of water, and sprinkle in 2 teaspoons of cumin and 1 bay leaf.
  4. Cover the pot and reduce heat to low, letting the Carne Guisada simmer gently for 1.5 hours.
  5. After the beef is tender, add 1 pound of halved baby red potatoes. Cook for an additional 20 minutes until the potatoes are tender.
