Method
 

Step-by-Step Instructions
  1. Season the chicken breasts with salt and pepper and allow to rest for 10 minutes.
  2. Combine Parmesan cheese and panko breadcrumbs in a shallow dish. Press each chicken breast into the mixture to coat.
  3. Heat olive oil in a skillet over medium-high heat until shimmering.
  4. Sear the chicken for 3-4 minutes on each side until golden brown.
  5. Reduce heat and add minced garlic, sautéing for about 1 minute.
  6. Pour in the cream and add Italian seasoning, mixing well and cooking for an additional 2-3 minutes.
  7. If using, add spinach and stir until wilted. Optionally, add more grated Parmesan for thickness.
  8. Cover and cook for another 8-10 minutes until chicken is cooked through.
  9. Adjust seasoning and serve the chicken with sauce drizzled over top.
