  • 1 medium White Onion Finely chopped.
  • 3 cloves Garlic Minced, fresh is best.
  • 2 tablespoons Tomato Paste Can be lightened with additional crushed tomatoes.
  • 1 tablespoon Dark Brown Sugar Light brown sugar can be swapped.
  • 1 tablespoon Balsamic Vinegar Red wine vinegar is a good alternative.
  • 28 ounces Crushed Tomatoes The main base for the sauce.
  • 1 teaspoon Italian Seasoning Can be homemade with oregano, basil, and thyme.
  • 1 handful Fresh Basil Can substitute with dried, reduce amount.
  • 1/4 cup Parmesan Cheese Grated, can substitute with nutritional yeast.
For the Pasta & Eyeballs
  • 8 ounces Pasta Noodles (Spaghetti) Any long pasta can be used.
  • 8 ounces Fresh Mozzarella (ciliegine) Can use bocconcini as a substitute.
  • 8 pieces Black Olives Cut into small circles for pupils.
  • 1 tablespoon Extra Virgin Olive Oil For drizzling over mozzarella.

Method
 

Cooking Steps
  1. In a large pot, heat olive oil over medium heat until shimmering. Add chopped onion and minced garlic, sauté for 3-4 minutes.
  2. Stir in tomato paste, dark brown sugar, and balsamic vinegar, sautéing for an additional 2 minutes.
  3. Add crushed tomatoes and Italian seasoning, bring to simmer for about 10 minutes.
  4. Mix in fresh basil leaves and grated Parmesan cheese, cover and simmer for another 10-15 minutes.
  5. Prepare mozzarella eyeballs by draining the ciliegine and using a straw to create indentations, adding olive pieces as pupils.
  6. Plate the spaghetti with sauce and top with mozzarella eyeballs. Drizzle with extra virgin olive oil before serving.
